Ovaj prestižan šampanjac spravljen je isključivo od chardonnay grožđa koje dolazi iz Grand Cru vinograda s položaja Oger i Le Mesnil-sur-Oger.
Kao i kod svih Bruno Paillard šampanjaca proizveden je isključivo od prvog otoka. Nakon inicijalne fermentacije vina, ovaj cuvee iz vrhunskih položaja je pripremljen za sekundarnu fermentaciju u trajanju dužem od 10 (!) godina. Degoržman je bio krajem 2009. godine.
Berba u Champagni 1996. je jedna od najboljih unazad 30-tak godina. Grožđe je vrlo brzo sazrijelo, a kiseline su ostale vrlo visoke, dajući na taj način mogućnost proizvodnje posebnih šampanjaca.
Bruno Paillard je to iskoristio u potpunosti, što se pokazalo vrlo dobrom odlukom.
Ovaj šampanjac je jedan od 30-tak najbolje ocijenjenih od strane Wine Spectatora u povijesti ocjenjivanja uopće, tako da stoji uz bok ekstremno prestižnim godištima Kruga i Salona. S te strane mu je zapravo i cijena, ako se komparira s navedenim, vrlo konkuretna.
WOW! This wine has the amazing quality of being light and full at the same time. A little greeen granny smith apple still present, especially on the nose. But, quickly turns into a baked red apple, with honey, and a slight touch of carmel. Medium yeast, just a enough to give you a taste of the apple tart. And then the finish and the finish and the finish. And then the finish goes on forever. It just makes you want more. This was served with selection of other vintage 1996 champagnes including Billecart-Salmon Brut, Dom Perignon Oenotheuqe, and Draprier Brut. The Paillard was hands down the best of the group and was loved by all.
